I wanted to create a healthy snack recipe that the majority of lifestyles could enjoy. Since I’m in the midst of a round of Whole30 right now, these Coconut Cashewand Date Bars were what I came up with. It was also a great way to show what the Vitamix 7500 could do!

Coconut Cashew Bars Recipe
Supplies need:
- 9×9 pan
- Parchment paper
- This makes for easy cleanup!
- Vitamix 7500
- Or a food processor/heavy duty blender
How to Make Whole 30 Bars
The consistency of these coconut cashew bars is totally up to you. You can use the Vitamix until they’re completely smooth, or you can do what I did and leave some texture in them.
If you blend or process until smooth, it will be the consistency of a Larabar. If youadd chocolate chips, it’s just like the cashew cookie kind!
Process Mixture
Add the dates, shredded coconut, and unsalted cashews to a high powered blender. Process the homemade energy bars ingredients on low for 3-4 minutes.
This is the texture I stopped with — it was loose, but I was able to press it together. If you want it smoother, simply process for a bit longer.
Form the Bars
Line a pan with parchment paper and press the mixture evenly into it. Allow it to set for an hour or two before slicing and serving.
TBK’s Pro Tip:The bars set best if left in the refrigerator or freezer to harden up.

- 2 cups pitted dates
- 3/4 cup shredded coconut unsweetened
- 2/3 cup unsalted cashews

Instructions
Add all of the ingredients into a high powered blender (I use the Vitamix 7500).
Process on low for 3-4 minutes.
