Easy homemade granola with the goodness of tropical fruits. Packed with delicious flavors, this tropical granola will be your new favorite breakfast!

I am super excited to be finally unveiling the new look forCook With Manali! This has been in the works for months. So what’s new?

A lot of things still need to done/fixed, so please be a little patient if something doesn’t work right away. We wanted the blog to have a cleaner look and make it more user friendlyand that’s what we have tried to achieve with this new design. All that you see here, the new design, the new logo it’s all been done by one and only – my husband, Sarvesh. He has worked day and night (along with his super busy full time job!) to give this blog a new look. I hope you guys love it as much as I do!

And now on to today’s recipe. Do you buy granola from stores? I used to, but that was some 2-3 years back. Once I made it at home, I never looked back. Actually I still buy a lot of stuff from stores because you know sometimes shortcuts are important and there’s no harm in taking them. However granola is too simple to make at home, so simple that it feels almost ridiculous to buy it from the grocery stores now. If you don’t believe me than you have to try making it at home once.

Homemade granola is easily customizable. You add to it whatever you like and you can also change flavors according to season. For example, it’s all sunny and bright these days and tropical fruits are in season and so I made this Tropical Granola. This granola has coconut, mangoes, pineapple and mandarins and is really bursting with flavors. I can’t tell you guys how good it was with that blueberry yogurt. Actually that’s what I ate for lunch yesterday. Have you ever done that? Granola for lunch? I guess it’s reasonably okay to eat granola for lunch or dinner if it’s as delicious as this tropical granola!

You can alter this recipe as per your liking. For example you may add other tropical fruits like papaya and banana too. I think banana chips would be great here. You can also use other nuts like macadamia nuts or cashews here.To make it vegan, use maple syrup in place of honey. Make this batch of

Method

Pre heat oven to 350 F degrees. Place the unsweetened coconut flakes in a baking pan. Toast at 350 degrees for 7-8 minutes stirring in between till the coconutflakes are toasted and browned.Set aside.

To a bowl add rolled oats, salt, ground ginger and chopped pecans. Set aside.

To a small pan, add honey, coconut oil and almond extract. Heat it a little till everything combines well together.

Pour the wet ingredients into the dry. Mix till the oats are well moistened with the honey and coconut oil.

Transfer the mixture into a baking sheet lined with parchment paper. Spread the mixture as a single layer. Bake at 325 F degrees for 30-35 minutes, stirring after every 10 minutes.

Remove granola from oven and let it cool down a bit. Once it has cooled down, add toasted coconut and dried tropical fruits.

Store your homemade tropical granola in airtight container and enjoy with milk, yogurt or as snack!

Ingredients

  • 3 cups rolled oats
  • 1/2 cup coarsely chopped pecans
  • 1 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 2/3 cup unsweetened coconut flakes
  • 1/3 cup honey
  • 3.5 tablespoons coconut oil melted
  • 1/2 teaspoon almond extract
  • 1.25 cups dried tropical fruits I used mix of pineapple, mango and mandarins

Instructions

  • Transfer the mixture into a baking sheet lined with parchment paper. Spread the mixture as a single layer. Bake at 325 F degrees for 30-35 minutes, stirring after every 10 minutes.
